Vegan Zucchini Bread – I made vegan zucchini bread twice this week while on vacation. It’s quickly becoming a household favorites! I had an abundance of local zucchini from our CSA and was trying to think of some ideas on how it prepare it. I love Zucchini sautéed with other veggies and potatoes and am vegan so I knew we would eat it eventually. The kids must have overheard John and I talking nostalgically about how much we loved eating Zucchini bread as a children. I know our neighbors, the Summers, would always give us extra zucchini from their garden. We found a vegan recipe online from The Full Helping for a Classic Vegan Zucchini Bread and it was a solid one. Our kitchen and cooking equipment is pretty limited at the beach house but we improvise when needed. I’m this instance, that means we used a toaster oven to bake since our oven down here is acting up and no one feels like sheeting out the dough for a new one, myself included. We also have never had a dishwasher here so everything has to be washed by hand. That being said, I try to limit the amount of dirty dishes generated by any meal preparation. I served the recipe twice now. First to my best friend Kelly, sister Gina and our kids and then for John and the kids last night. It’s delicious! It baked perfectly in the toaster oven. It didn’t need it but the kids and John put some plant based butter on it for an extra treat. Bonfire on the Beach – For the 2nd year in a row we attended a bonfire on the beach. My sister-in-law gets a permit at Dewey Beach, DE and we have a little party. It’s pretty low key. We ended up running into a friend from home who was renting a beach front spot nearby and rounded out the party. My SIL brought hot dogs and Smores. We brought basically nothing which became a joke. The kids stayed happy playing with a kite, badminton, glow sticks, colored fire powder, and good company. We played guessing games and watched for shooting stars while moon gazing. There was a strange weather pattern happening where the air was really warm but then cold air would blow from ocean and the weather would feel completely different. I am really grateful my SIL organized everything and we had such a perfect evening.
